Sorry it’s taken so long to get back to this anon! This is a lovely question, and I’ll try to answer it the best way I can.
It all depends on how you like to play. For example, my first character was a mage, and I mainly only let her focus on Conjuration spells. Any other skill growth she experienced was part of her menial use of said skill, i.e. Lockpicking. As a result of this, her Conjuration skill maxed out pretty quickly and I soon grew bored with her, because in my mind, it didn’t make sense for her character to learn any other skills, but it made gameplay rather monotonous.
On a more technical level, I’d say it’s easier to flesh out your skills and put points in all different trees, but as the saying goes “Jack of all Trades, Master of NONE.” You’ll have more variety, but those talents would be stronger sooner, if you focus on one at a time.
